This protein packed spinach bacon quiche recipe is a cheese and bacon lovers delight. It can be made with a gluten free crust. For a diabetic and keto friendly quiche recipe leave the crust off or use a vegetable crust.

Prep Time: 15 minutes

Cook Time: 45-50 minutes

Serving Size: 1 slice

Servings per batch: 8

Ingredients:

1 pie shell crust (optional)

16 oz.- 8 slices bacon (cooked, drained & chopped)

1/2 bag frozen spinach (thawed & drained)

4 eggs

1 cup milk

1/8 tsp. cayenne pepper

4 cups (1 lb.) shredded Monterey Jack Cheese

Directions:

  1. Preheat oven to 350º F.
  2. Put pie shell into 9-10 inch pie pan.
  3. Evenly spread bacon over bottom of pie shell.
  4. Evenly spread spinach on top of bacon layer.
  5. Add shredded cheese over spinach layer.
  6. In the 4 cup measuring glass, combine eggs, milk and cayenne pepper. Mix well.
  7. Pour into pie over cheese.
  8. Bake for 45-50 minutes until cheese is golden brown and center is firm.
  9. Remove from oven and let it rest for 10-15 minutes before slicing.
